CARIBBEAN BARBECUE 
1 1/2 lb. boneless pork steaks
1 lg. red onion (thinly sliced)
3/4 c. fresh lime juice
1 tsp. salt
1/4-1/2 tsp. cayenne pepper

Trim fat from pork. Combine pork and onions in a non-metal dish. Combine lime juice, salt and cayenne and pour over pork. Refrigerate before camping trip. Take steaks out, cover with foil and store in cooler; store marinade in jar. When ready to cook, broil steaks over coals 8-10 minutes, turning once. Heat onions and marinade and pour over steaks to serve. Serve with tortillas and salad. Serves 6 (207 calories per serving).
