FINNISH CARROT CASSEROLE
(PORKKANALAATIKKO)
 
5 medium sized carrots
1 1/2 cups cooked brown rice
2 cups milk
2 eggs
1 tbsp. brown sugar
1 tsp. salt
3 - 4 tbsp. butter
1/2 cup bread or cracker crumbs

Preheat oven to 375 degrees F. Finely shred the carrots into a large mixing bowl. To this, add the rice, milk, eggs, salt, and brown sugar and stir until mixed evenly. Grease a casserole dish and pour carrot mixture into it. Melt the butter and mix in the bread or cracker crumbs. Sprinkle the crumbs over the casserole. Bake for about 45 minutes, or until no liquid drains from the casserole when the edge is pulled away from the side. Serves 6.

*This is a traditional Finnish Christmas dish and goes well with roasted meat or ham, and mashed potatoes. Hyvää ruokahaluaa!
