CREAMY CHEESY MASHED POTATOES 
2 lb. (about 6 medium) potatoes, peeled and cut into 1-inch cubes
3/4 c. evaporated milk
1/4 c. butter
1 c. shredded Cheddar cheese
salt and pepper, to taste

Cook potatoes in a large sauce pan (cover with water) for about 15-20 minutes or until tender. Drain. Return potatoes to sauce pan and add milk and butter. Beat with hand mixer until smooth. Stir in cheese and season with salt and pepper.
