CHEESY GARLIC MASHED POTATOES 
2 1/2 lb. russet potatoes, cut in half
water (enough to cover)
1 1/2 tsp. garlic salt (I use Lawry's)
2 cups milk
4 tbsp. (1/2 stick) butter
1/2 cup shredded cheese (your favorite)

Peel potatoes if you want. Its not necessary, but it is preferred by some.

Put potatoes in a medium sized pot and fill with just enough cold water to cover the potatoes. Bring the pot to a boil, then add garlic salt and let cook at medium heat until they are tender enough to be easily pierced by a fork. This should take about 15 to 20 minutes.

Immediately drain potatoes. Then you will want to put them back in the pot and cook at a medium heat for 3 minutes.

While doing this, heat milk and butter. Once all of this is done, add potatoes into bowl for mashing (this can be the same pot that you cooked them in) and begin mashing potatoes while gradually adding milk/butter and shredded cheese.

Serve and enjoy!

Brent - am going to try your recipe with one adjustment. Recently spotted a recipe - in which garlic cloves were added directly to the potato water and cooked along with them. Then drain water - and mash potato & cooked garlic together. Am going to try that - then add your cheese at the end. Think it will be wonderful. I DID your recipe - but changed up as in original post - by adding a garlic clove directly in the water as I cooked the potatoes. This preparation - in addition to the cheese is "excellent". I did also use shredded Colby Cheese - which is akin to a strong Cheddar.
