QUICK COFFEE CAKE 
3/4 c. sugar
4 tbsp. soft shortening
2 eggs

Beat well. Stir in 1/2 cup milk plus 2 tablespoons.

1 1/2 c. flour
2 tsp. baking powder
1/2 tsp. salt

Stir just to mix. Spread batter into greased and floured small aluminum pie pans. Sprinkle batter with mixture of 1/4 cup sugar and 3/4 teaspoon cinnamon. Bake until toothpick comes out clean. Serve warm or cool. Bake at 375 degrees for 20 minutes.
