TOFU-NUT LOAF (With Mushroom
Sauce)
 
This may be served like regular meat loaf and is good served cold with catsup or horseradish.

TOFU LOAF:

1 c. oatmeal (reg., not quick)
1 c. walnuts
1 lb. tofu
1 med. onion, grated
1 carrot, grated
1/2 c. green pepper, grated
1 tsp. salt
1 tsp. sage
1 tsp. thyme
1 tsp. oregano

Place oats in blender until you have a fine flour. Chop nuts in blender until you have a coarse mix.

In a large bowl place (washed and drained) tofu and crumble with hands. Add the oat flour and nuts. Add remaining (grated) ingredients and the seasonings.

Shape into a loaf and bake at 350 degrees 45 minutes. Loaf should not be more than 2 inches high.

Brown 1/2 lb. mushrooms in 2 tbsp. butter. Remove mushrooms; set aside. In same skillet add 2 tbsp. butter, 2 tbsp. flour and thicken gently adding 1 cup milk. Add a dash of garlic salt, a drop of Tabasco sauce and the mushrooms. Serve hot over the tofu loaf. If milk is not on diet use water or soy milk.
