EASY BEST OATMEAL - RAISIN
COOKIES
 
1 1/4 c. butter (2 1/2 sticks)
3/4 c. firmly packed brown sugar
1/2 c. granulated sugar
1 egg
1 tsp. vanilla
1 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt, optional
1 tsp. cinnamon, optional
1/4 tsp. nutmeg, optional
3 c. quick or old fashioned oats
1 1/2 c. raisins

Heat oven to 375 degrees. Beat butter and sugars until fluffy. Beat in egg and vanilla. Add combine flour, baking soda, salt and spices; mix well. Stir in oats; stir in raisins.

Drop by rounded tablespoons onto ungreased cookie sheet. Bake 8-9 minutes for chewy cookies, 10-11 minutes for crisp cookies. Cool 1 minute on cookie sheet; remove to wire rack. Store tightly covered. Yield 4 1/2 dozen.

I just mix all ingredients together,it was a bit dry, so I decided to add chia seeds soaked in 1 cup of water instead another egg. I used wholemeal flour and also added walnuts for healthier addition. The cookies are great! Thanks

You must add cinnamon or nutmeg for more flavor. I added just chocolate chips to half of batter and the chocolate chip ones were great.

Great recipe. I didn't have enough flour and adjusted the recipe with my oats (in blender, rice flour), flax seed which tastes like almonds,ripe banana, it worked just fine, excellent as a matter of fact because I used this recipe as a base and made it adequate with what I had. M A R V E L O U S!!!

Highly recommended but Ill add that they should be spaced an inch or so apart and that I didn't think they were cooked enough - oh but they were. Quick easy and yummy (I would even eat them raw).
