RICE PUDDING 
1 c. rice (partly cooked)
2 c. milk
1 c. sugar
2 eggs
1/2 c. raisins (soaked in hot water)
1 tbsp. vanilla

In a bowl beat sugar, milk, eggs and vanilla. Grease a casserole with butter, then put the rice and the liquid ingredients. Dot with butter and cinnamon. Bake at 250 degrees for 30 minutes. After nearly cooked, add the plump raisins and finish baking. Don't over bake or it will be too dry.

For a refreshing change, use grated orange peel and orange juice instead of the vanilla and eliminate the cinnamon.
