RAISIN-RICE PUDDING | |
4 eggs 3/4 c. sugar 2 c. milk 1 1/3 c. cooking long-grained rice 1 1/2 tsp. lemon juice 1 1/2 tsp. vanilla 1 tbsp. butter, melted 1 tsp. ground nutmeg 2/3 c. raisins Combine eggs, sugar and milk; beat at medium speed 1-2 minutes until sugar dissolves. Add remaining ingredients, stir well. Pour into 1 1/2 quart casserole, place casserole in baking pan. Pour boiling water into baking pan to depth of 1 inch. Bake uncovered 350 degrees for 45 minutes. Stir and bake an additional 10-15 minutes or until set. Serve warm at room temperature. Yield 6 servings. |
