CHICKEN FRICASSEE 
1 (4 lb.) chicken, cut up
1 lg. can tomatoes
2 green peppers
1/2 lb. mushrooms
1 onion
2 carrots
2-3 cloves garlic
1 bay leaf
Top with Parmesan cheese.

Spray with Pam. Preheat large skillet over medium heat 3-5 minutes. Place chicken, skin side down, in pan and sear Completely fill pan with chicken. Cover and brown 15 minutes, keeping turned. Add tomatoes, diced peppers, mushrooms, diced onion, sliced carrots, cloves and bay leaf. Cover and cook 20 minutes. Serves 6-8.
