MEATBALLS AND CHICKEN FRICASSEE 
1 rib celery, chopped
2 onions, chopped
1 green pepper, chopped
2 tbsp. butter
1 lb. ground beef
1 onion, minced
1 chicken, cut up
Salt
Onion salt
Black or red pepper
Garlic salt
Paprika
Garlic powder

Saute chopped onions, celery and green pepper in butter. Season with salt, black pepper, garlic and paprika. Use enough paprika to coat mixture red; set aside.

Season meat with salt, onion salt, garlic powder, paprika and red or black pepper to taste. Add minced onion, mix, and form into meatballs. Clean chicken; pat dry. Coat with seasonings to taste.

Place meatballs on onion mixture; place chicken on meatballs. Add water to cover only meatballs. Bring to boil. Cover; simmer on low heat for 2 hours. Best prepared ahead and reheated before serving.
