CHICKEN 'N BROCCOLI, IMPOSSIBLE
PIE
 
1 (10 oz.) pkg. frozen chopped broccoli, thawed
3 c. shredded Cheddar cheese (12 oz.)
1 1/2 c. cut up cooked chicken
2/3 c. onions
1 1/3 c. milk
3 eggs
3/4 c. Bisquick mix
3/4 tsp. salt (optional)
1/4 tsp. pepper

Heat oven to 400 degrees. Grease 10 x 1 1/2 inch pie or quiche dish. Drain broccoli. Mix with 2 cups of the cheese, chicken and onion in pie plate. In blender beat milk, eggs, Biscuit mix, salt and pepper until blended. About 15 seconds or 1 minute with hand beater. Pour into pie plate and bake until a knife inserted in center comes out clean, about 25 to 35 minutes. Top with remaining 1 cup cheese. Bake just until cheese melts. Makes 6 to 8 servings.
