FIESTA PORK BAKE | |
2 tbsp. butter, melted 6 rib pork chops Salt & pepper to taste 1 (1 3/8 oz.) pkg. dry onion soup mix 1 lg. green pepper, chopped 1 c. uncooked regular rice 1/2 c. catsup 1 tsp. Worcestershire sauce 2 c. boiling water 1 c. (1/4 lb.) Cheddar cheese, shredded Coat a shallow 2-quart casserole with melted butter. Sprinkle chops with salt and pepper, and arrange in casserole; top with soup mix, green pepper and rice. Combine catsup and Worcestershire sauce; spread over rice. Pour in boiling water; cover and bake at 350 degrees for 55 to 60 minutes or until done. (Additional 1/2 cup of water may be added if casserole becomes too dry). Remove from oven and top with cheese. Cover and allow to stand 10 minutes. Yield: 6 servings. |
