HEARTY RIBS AND BEAN BAKE
3 to 3 1/2 lb. country style pork ribs
1/4 c. water
1 (15 oz.) can tomato sauce
1 env. onion soup mix
1/3 c. brown sugar
2 tbsp. prepared mustard
2 dashed Tabasco sauce
3 c. great northern beans, cooked and drained
3 c. red kidney beans, cooked and rained
1 1/2 c. sliced celery
1 red or green bell pepper, sliced into thin strips

Place ribs in 9 x 13 inch baking dish; add water. Cover dish and bake at 350 degrees for 1 1/4 hours. Remove ribs to paper towels. Pour off cooking liquid and reserve. Combine tomato sauce, onion soup mix, brown sugar, mustard, and Tabasco in small saucepan; cook slowly for 10 minutes. Remove fat from top of reserved cooking liquid; add water to make 1 cup. Stir this liquid into tomato mixture. Combine beans with celery, pepper strips, and all but 1/2 cup tomato mixture. Arrange ribs on top of bean mixture; brush ribs with remaining tomato mixture. Cover the dish tightly. Bake at 350 degrees for 30-45 minutes. Arrange on warmed serving platter. Makes 6 servings.
