FANNY FARMER FRENCH ONION 
1 tbsp. butter
1 c. chunky chopped sweet onion
1 tbsp. flour
4 c. clear chicken broth
Fresh ground pepper
1 c. water, if needed
Mozzarella cheese
Herb bread cubes

Melt butter in heavy 2 quart sauce pan. Add onions. Stir until lightly brown. Add flour and mix well with onions. Add chicken broth. Stir in some pepper. Simmer at least 30 minutes. Add more water if needed (1 cup). When ready to serve, pour into bowl. Place slices of mozzarella cheese on top. Place in oven and brown cheese. Put herb bread cubes on top before serving.
