BAKED CHEESE GRITS 
1 c. grits
4 c. boiling water
1 tsp. salt

Cook until thickened, remove from heat and add 1 stick butter. When melted add milk and egg mixture. Beat 2 eggs in measuring cup and fill on up to 1 cup with milk. Fold into grits. Pour into large flat baking dish (greased). Bake at 325 degrees for 45 minutes. Remove from oven and cover with grated Velveeta cheese and bake another 10 minutes.
