BAKED CHEESE GRITS 
1 c. quick grits
1/4 lb. butter
1/4 lb. garlic cheese
1/4 lb. sharp cheese
1/2 c. milk
3 well beaten eggs

Cook grits as directed on box then remove from heat. While grits are cooking, break your cheese into small pieces so that you can add cheese to grits when grits are really hot and cheese will melt. As soon as you remove grits from heat, add cheese chunks and remaining ingredients. Mix well until cheese is pretty well melted. Pour into a greased casserole (2 1/2 quart works well). Bake at 350 degrees uncovered for about 1 hour. A great dish for a brunch. Serves 4.
