BAKED CHEESE GRITS 
1 qt. milk
2/3 c. butter
1 c. quick-cooking grits
1/3 grated Parmesan cheese
1 tsp. salt
1 tsp. sugar (opt.)
2/3 c. grated cheese of your choice

Bring milk to a slow simmer. Add butter. Gradually stir in grits and continue cooking and stirring until very thick. Remove from heat, add salt and beat with electric mixer for 5 minutes, adding half of the cheese. Pour into large square cake pan and allow to set. Pour melted butter over top and add remaining cheese. Bake at 350 degrees for 30 minutes. Let set 5 minutes before serving.
