BAKED CHEESE GRITS 
6 c. boiling water, salted
1 1/2 c. quick grits
1 stick butter
1 1/2 tsp. salt
1 lb. Velveeta cheese, cubed
3 eggs
1 tbsp. Tabasco sauce (optional)

Boil water. Stir in grits and continue stirring 2 minutes. Add butter and cheese; stir until melted. Beat eggs and stir in. Add Tabasco, if desired. Bake 35 minutes at 350 degrees.
