BAKED CHEESE GRITS 
1/2 tsp. salt
2 2/3 c. water
2/3 c. quick-cooking hominy grits
2 tbsp. butter
1 1/2 c. (6 oz.) American cheese, shredded
2 eggs, beaten
Dash of pepper

Preheat oven to 350 degrees. Grease a 2-quart baking dish. Add salt to water and bring to a rolling boil. Add grits; return to boil. Cook, stirring constantly, until very thick, about 6 minutes. Remove from heat and add butter. Combine cheese, eggs and pepper; stir into grits. Pour into baking dish. Bake 40 minutes or until lightly browned.
