UNSTUFFED CABBAGE (SWEET AND SOUR MEATBALLS) | |
1 sm. head of cabbage 1 med. onion, diced 1 (15 oz.) can stewed tomatoes 2 sm. cans tomato sauce Lemon juice to taste 3/4 c. brown sugar (to taste) 1/2 c. honey 6 to 8 ginger snap cookies (optional) 2 lbs. chop meat 1/2 c. uncooked rice Salt, onion powder to taste Raisins, optional Dice cabbage; put in large pot with diced onion, stewed tomatoes and 16 ounces water. Cook until tender about 1/2 hour. Add tomato sauce and more water if necessary. Alternate brown sugar, lemon juice and honey to make sweet and sour taste. Season meat with salt and onion powder and add rice to meat. Form meatballs and drop into pot. Cook until meat is brown (3/4 hour). If meat juices dilute the flavor of the sauce, add more lemon juice, honey and brown sugar to taste. Tastes even better after frozen. Enjoy! |
