YORKSHIRE CHICKEN 
1 frying chicken, cut up
1 1/3 c. flour, divided
1 tsp. seasoned salt
1 tsp. pepper
1 tsp. poultry seasoning
1 tsp. baking powder
3 eggs
1 1/2 c. milk

Mix 1/3 cup flour, salt, pepper, and poultry seasoning and coat chicken pieces. Brown on all sides in 1/2 cup butter in a skillet. Arrange chicken pieces in 13 x 9 baking pan. Bake at 350 degrees for 30 minutes; remove chicken and, if desired, make gravy with drippings.

With electric mixer beat together remaining flour, (salt if desired), baking powder, eggs, and milk. Add remaining butter from browning chicken pieces, and beat until smooth.

Put chicken back in pan. Pour mixture over chicken and bake at 350 degrees another 45 minutes. Serve with gravy if desired. Yield 4 servings.
