POTATOES AND CHEESE 
8 to 9 med. potatoes
1 can mushroom soup
1/2 c. milk
1 lb. Velveeta cheese
1 med. onion, diced
Salt
Pepper
1 jar of mushrooms (optional)

Peel and slice potatoes very thin. Combine soup, milk, and onions in large bowl. Add potatoes and mushrooms (if you would like). Salt and pepper. Spray a large baking dish with PAM. Pour mixture in dish and slice cheese over the top. Bake at 400 degrees for 45 to 50 minutes.
