APPLE CRUMB CAKE 
Crust:

2 c. all-purpose flour
1 c. brown sugar
1/2 c. quick oatmeal
3/4 c. (1 1/2 sticks) butter

Combine ingredients and pat mixture into 9x13-inch pan, forming crust.

Apple crumble filling:

1 c. sugar
3 tbsp. cornstarch
1/4 tsp. salt
1 c. water
1 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla
6 medium apples, peeled and thinly sliced

In saucepan or in microwave combine sugar, cornstarch, salt and water. Cook until thick. Add cinnamon, nutmeg and vanilla. Add apples and toss lightly; spread evenly in crumbs. Scoop filling onto crust. Pat remaining crumbs over apples. Bake at 350°F for 50 to 55 minutes.
