APPLE CRUMB CAKE | |
1/2 c. butter, room temp. 1 c. sugar 2 eggs 2 c. all purpose flour 1 1/2 tsp. baking powder 1/2 tsp. ground cinnamon 1 tbsp. grated lemon peel 1/2 c. milk 2 lg. Golden Delicious apples, peeled, cored, thinly sliced CRUMB TOPPING: 1 1/4 c. all purpose flour 3/4 c. sugar 1/2 tsp. ground cinnamon 3/4 c. butter, chilled Preheat oven to 350 degrees. Grease a 13"x9" baking pan. In medium bowl, beat butter, sugar, eggs until creamy. Blend flour, baking powder, cinnamon and lemon peel; stir into sugar mixture alternately with milk. Spread batter in greased pan. Arrange apple slices on top of batter in slightly overlapping rows. To Make topping: In a small bowl, combine flour, sugar and cinnamon. Use a pastry blender or 2 knives to cut in butter until mixture resembles coarse crumbs. Sprinkle topping over apples. Bake 40 to 45 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack. Makes about 16 servings. |
