APPLE CRUMB CAKE 
1/2 c. butter, room temperature
1 c. sugar
2 eggs
2 c. all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. ground cinnamon
1 tbsp. grated lemon peel
1/2 c. milk
2 lg. Golden Delicious apples, peeled, cored, thinly sliced

CRUMB TOPPING:

1 1/4 c. all-purpose flour
3/4 c. sugar
1/2 tsp. ground cinnamon
3/4 c. butter, chilled

Preheat oven to 350 degrees. Grease a 13 x 9 inch baking pan. In a medium bowl, beat butter, sugar, and eggs until creamy. Blend flour, baking powder, cinnamon and lemon peel; stir into sugar mixture alternately with milk. Spread batter in greased pan. Arrange apple slices on top of batter in slightly overlapping rows.

To make topping, in a small bowl, combine flour, sugar and cinnamon. Use a pastry blender or 2 knives to cut in butter until mixture resembles coarse crumbs. Sprinkle topping over apples. Bake 40 to 45 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack. Makes about 16 servings.
