Sprinkle 1 or 2 whole broiler-fryers with regular or lite salt and pepper. Hook wing tips onto back; tie legs together. Layer a shallow roasting pan with heavy duty foil both ways with enough foil to bring up and cover chicken.
Set chicken into pan and sprinkle with paprika. Arrange around chicken 4 potatoes, peeled and quartered, and cut up carrots. (Green beans can also be used.) Sprinkle with salt, pepper and chopped parsley.
Bring ends of foil up over chicken and double fold so it's all sealed. Bake at 450 degrees 1 hour. Fold back foil; roast 20 more minutes, basting with juices.
