VIDALIA ONION RELISH 
1 gal chopped onions (10 lb.)
1/2 c. salt

Sprinkle salt over onions. Put layer of ice over onions and let stand for 2 1/2 hours. Squeeze chopped onions and drop into the following mixture.

4 c. sugar
4 c. vinegar
3 tsp. turmeric
2 tsp. celery seed
2 tsp. dry mustard

Bring to a boil and soak in hot jars. Yields 8 1/2 pints.
