VIDALIA ONION PIE 
1 deep dish pie shell
2 1/2 lbs. onions
3 tbsp. butter
4 eggs
1/2 c. grated Parmesan cheese
1 c. cultured sour cream
1 tsp. salt
1/4 tsp. fresh ground pepper
1 tbsp. herbs, dill or celery seeds
4 strips of cooked bacon or sausage, crumbled

Preheat oven to 450 degrees. Skin and thinly slice onions. Melt 3 tablespoons of butter in heavy saucepan. Add onions. Stir and cook over low heat until translucent. Set aside to cool. Combine and heat slowly: 3 eggs, sour cream, salt, pepper, herbs and cheese. Mix in onions. Brush bottom of pie shell with 1 slightly beaten egg. Add onion mixture to pie shell. Sprinkle bacon or sausage on top. Bake pie at 450 degrees for 10 minutes. Reduce heat to 300 degrees until crust is light brown or about 1/2 hour. Serve piping hot and with a tossed green salad.
