Select a standing aged prime rib roast, well marbelized. Let stand at room temperature for 1 hour. Preheat oven to 375 degrees. Season and place in shallow roasting pan. Do not cover or add water. Put roast in oven for just one hour. Turn off heat but DO NOT OPEN DOOR UNTIL READY TO SERVE.
Regardless of length of time roasting in oven, 30 or 40 minutes before serving, turn oven on at 375 degrees for remaining 30-40 minutes. The meat will be very brown on the outside, beautifully pink all the way through - medium rare and juicy.
Use the same procedure for any size roast. May be cooked in morning, let stand in the unopened oven all day, finish cooking before serving.
