CRANBERRY CAKE 
3 tbsp. shortening
1 c. sugar
1 egg
1 tsp. baking soda
1 1/2 c. flour
1 c. milk
2 c. whole cranberries
1/2 tsp. vanilla
1/4 tsp. orange extract (optional)

Cream shortening and sugar. Add egg and mix thoroughly. Sift together soda and flour. Add alternately with milk. Add cranberries, vanilla, and orange extract, if desired. Pour into greased 8x10 inch pan.

Sprinkle on top:

1/2 c. brown sugar
1/2 c. chopped walnuts

Bake at 375 degrees for 35 minutes. Serve warm with Butter Sauce.

BUTTER SAUCE:

1 c. sugar
1/2 c. butter
1/2 c. coffee cream

Bring to a boil for 1 minute. Serve warm on cake.
