CABBAGE AND EGGPLANT | |
2 sm. or 1 med. eggplant, peel and cut into cubes 1 med. size head cabbage, coarsely cut Put in deep skillet or heavy pan. Add 1 or 2 cups water and let simmer until almost tender. Drain off most of the water. Add soy sauce to taste (about 1/4 cup). Simmer a few minutes more and serve. |
