NATE'S SIMPLE MARINARA SAUCE | |
6 medium tomatoes, preferably on vine 1 large Vidalia onion 6 cloves garlic 1 cup carrots 1 (6 oz.) can tomato paste (Hunts) 4 tbsp. Italian seasoning (McCormick) 1 (750ml) bottle sweet red wine Remove tomatoes from vine and core. Cut into quarters and place in a blender. Blend tomatoes until smooth. Peel onion and cut into quarters. Add onion to blender, blend until smooth. While blender is running add peeled garlic cloves, carrots, tomato paste, and Italian seasoning. Continue to blend until mixture is very smooth. Pour into a 5-quart or larger stockpot. Add entire bottle of wine and mix well. Boil sauce on medium to medium-high heat for 30 to 60 minutes or until desired thickness is reached. Note: I use an 8-quart stockpot when I make my sauce simply to keep the stove-top clean since my 8-quart pot is tall enough to keep splattering sauce contained within it! Submitted by: Nate |
