SAUSAGE JAMBALAYA 
1 lb. fresh pork sausage
2 c. cooked rice
1 med. onion, chopped
1 bell pepper, chopped
1 clove garlic, minced
1 stalk celery, chopped
2 stems green onions
Salt and pepper to taste
1 tbsp. cooking oil

In pot (do not use black pot) add cooking oil. Bring to medium heat and brown sausage. Sausage can be cut into 2 inch lengths before browning. After sausage browns (10 to 12 minutes) remove from pot. Add onions, garlic, bell pepper, celery and bottoms of green onions.

Saute seasonings on low heat stirring slowly. Add sausage to pot, cover with water and simmer about 45 minutes. After sausage is cooked, add the 2 cups of cooked rice and mix well. Garnish with finely chopped green onion tops.
