CHICKEN AND SAUSAGE JAMBALAYA 
1 fryer (2 1/2-3 lb.)
1 lb. smoked pork sausage
2 c. rice
2 cans beef broth
1 onion
1 rib celery
1 bell pepper
1 stick butter
Salt & pepper to taste

Boil and debone fryer. Saute onions, bell pepper and celery in butter. Add sausage and fry. Add all other ingredients. Place in heavy pot with lid. Bring to boil, turn to low heat and simmer 1 hour.
