SAUSAGE CHICKEN JAMBALAYA 
2 chicken breasts (skinned)
1 bay leaf
2 to 3 black peppercorns
3 c. chicken broth
1 med. green bell pepper, diced
1 med. onion (diced)
1 clove garlic
1 lb. Johnsonville mild Italian sausage
1 tbsp. vegetable oil
2 c. rice
1/2 tsp. thyme
1 qt. tomatoes
Salt and pepper to taste

Place chicken in microwave bowl with bay leaf, peppercorns and broth on high. Bring to a boil. Cover and cook on medium about 8 minutes until done. Remove chicken and dice into bite size pieces. Reserve broth.

Saute pepper, onion and garlic in microwave for 1 minute. Add sausage which has been removed from casing and broken in 1 inch pieces. Cook on high about 3 minutes or until browned, drain oil off.

Add rice, stir. Add chicken, broth, thyme, tomatoes, and spices. Cover cook on high 8 minutes, stir. Cook on medium about 30 minutes or until rice is soft and liquid is absorbed.

Since microwave ovens vary in power, you may need to adjust your cooking time.
