CHICKEN & SAUSAGE JAMBALAYA 
1 whole chicken
1 link sausage, cut in slices (Elgin, Meyers are good)
1 c. onion, chopped
1 c. celery, chopped
4 cloves, diced
1 1/2 c. uncooked rice
1 tsp. each thyme, basil, dry mustard, garlic powder, salt, white pepper, black pepper

Cook chicken and reserve 3 cups broth. Remove chicken from bone and cut into small pieces. Saute vegetables and sausage together in a large saucepan. When vegetables are limp, add 3 cups chicken broth, chicken, spices. Bring to a boil. Add rice and reduce heat. Cook 20 to 30 minutes until rice is done.
