CHICKEN SAUSAGE JAMBALAYA 
2 lbs. chicken or duck pieces
1 lb. smoked sausage
1 c. chopped onion
1/2 c. chopped shallot
1/4 c. chopped parsley
2 bell peppers, cut up
1/2 c. chopped celery
2 lg. toes garlic, finely chopped
1 (6 oz.) can mushroom pieces
1 lg. can whole tomatoes
1 tbsp. Kitchen Bouquet
1 1/2 c. long grain rice
4 c. water
1 tbsp. salt
1 tsp. black pepper
1/2 tsp. cayenne pepper

(Green onion can be substituted for shallot).

In 8 quart pot cook meat on low 40 minutes, stir occasionally. Add next 6 ingredients. Cook 15 minutes on medium, uncovered. Stir frequently. Add remaining ingredients. Stir together and cook over medium heat until boiling. Cover and simmer for 20 minutes.
