SAUSAGE AND CHICKEN JAMBALAYA 
1/2 lb. unsalted butter
1 lb. raw white rice
1 (8 oz.) can tomato sauce
1 (1 lb.) can whole tomatoes
1 c. chopped green pepper
1 c. chopped onion
1 lb. chopped chicken
1 lb. Polish sausage, sliced
1 c. chopped celery
3 c. chicken stock
1 tsp. salt
1 tsp. white pepper
1 tsp. black pepper
1/2 tsp. thyme
1/2 tsp. cayenne pepper
1/2 tsp. sage
1/2 tsp. oregano

1. Saute onion, green pepper, celery and sausage in butter until tender.

2. Add remaining ingredients.

3. Place mixture in large casserole.

4. Bake, uncovered at 375 degrees for 1 hour. 6 to 8 servings.
