CHICKEN AND SAUSAGE JAMBALAYA 
1 lg. fryer
1 lb. smoked sausage
1/2 c. cooking oil
2 lg. onions
4 or 5 cloves garlic, cut
Salt and pepper to taste
2 tbsp. parsley
1/2 c. green onions
3 c. raw rice
Tony's Season
Dash of Worcestershire sauce
Red pepper to taste
6 c. hot water
1 c. bell pepper

Cut and season chicken with salt, pepper and Tony's. Heat oil in pot and brown chicken and cut up sausage and brown. Add onion, green onions, peppers, and remaining seasonings; simmer until tender. Add raw rice and water. Cover and simmer until rice is tender and water has been absorbed. Stir occasionally to keep from sticking. Serves 10 or 12. Ingredients may be doubled.
