CHICKEN AND SAUSAGE JAMBALAYA 
2 c. rice
2 whole chicken breasts, cubed
1 lb. smoked sausage
6 green onions, chopped
4 ribs celery, chopped
2 cans beef consomme
1 stick butter
1 green pepper, chopped
Salt & pepper to taste

Saute onions, celery, green onions and peppers in butter. Fry cubed chicken breast until done. Fry sliced sausage and drain.

Combine chicken, sausage, rice, beef consomme and all seasonings in heavy pot with tight fitting cover. Heat to lowest point and cook until rice is done. Do not uncover during cooking. Cooking time is approximately 45 minutes.
