CREOLE CHICKEN JAMBALAYA 
3 lb. chicken (fryer)
4 tsp. butter
3 med. onions
1 pkg. shallots
1 lg. bell pepper
3 cloves garlic
2 stalks celery
1 can whole or chopped tomatoes (8 oz.)
2 c. raw rice
3 c. water
Salt & pepper to taste

In one pot, brown cut up chicken. In another large pot, melt butter and add next 5 ingredients; saute until light brown. Add salt and pepper to taste. Add tomatoes and simmer about 30 minutes. Add water and bring to a hard boil. Lower fire and add rice and chicken. Cover tightly and let cook for 30 minutes or until rice is cooked. Serves 8.
