CHICKEN AND SAUSAGE JAMBALAYA 
3 lbs. chicken
1 1/2 lbs. sausage
1 lg. onion
1/2 c. celery
1/4 c. bell pepper
2 c. uncooked rice

Brown chicken and sausage, then drain them. Saute onion, celery, and bell pepper until tender. Set aside in small bowl. Put just enough oil in 5 quart pot and brown rice. Then add 4 cups water to rice and add the rest of the already cooked ingredients. Add salt and pepper to taste. Simmer until rice is done and the water is cooked out.
