CHICKEN AND SAUSAGE JAMBALAYA | |
6 beef bacon slices, chopped 1 1/2 c. sliced celery 1 c. uncooked long grain rice 1 c. chopped onion 1 c. chopped green bell pepper 1 (14 1/2 oz.) can tomatoes 1/2 lb. cooked turkey sausage, cut into 1/2 inch pieces 1 1/2 c. water 1/2 c. garlic flavored barbecue sauce 1 tsp. salt 1/4 tsp. cayenne pepper 1 1/2 c. diced cooked chicken Fry bacon until crisp in 3-quart Dutch oven or large deep skillet. Stir in celery, rice, onion and green pepper. Cook and stir 5 minutes. Add undrained tomatoes, sausage, water, barbecue sauce, salt and cayenne. Stir. Bring to a boil. Cover. Simmer 20 minutes, stirring occasionally. Add chicken. 4 servings. |
