BROCCOLI BEEF WITH OYSTER SAUCE 
1 lb. flank steak
1 tbsp. soy sauce
1 knob ginger root, sliced thin
1 tbsp. cornstarch
Salt to taste
1/2 tsp. catsup
1 tbsp. oil
4 c. broccoli

GRAVY:

2 tbsp. soy sauce
1 tbsp. cornstarch
1/2 tsp. sugar
1/2 tsp. salt
1 c. water
2 tbsp. oyster sauce

Cut steak lengthwise down the middle and slice strips crosswise, 1/4 inch thick on a slant. Marinate with soy sauce, ginger root, cornstarch, salt, catsup and oil.

Cut broccoli into bite size chunks. Saute broccoli in frying pan with 2 tablespoons oil over high heat for 2 to 3 minutes and add salt to taste. Add a few drops of water if necessary to prevent burning. Broccoli should be barely cooked. Remove from frying pan.

Saute flank steak with 1 tablespoon oil over high heat until brown, greasing bottom of pan to prevent sticking. Flank steak should be pink in the middle. Add broccoli and mixed gravy ingredients and cook until thickened. Serves 4.
