KENTUCKY PECAN PIE 
1 c. white corn syrup
1 c. dark brown sugar
1/3 tsp. salt
1/3 c. melted butter
1 tsp. vanilla
3 whole eggs, slightly beaten
1 heaping c. shelled pecans
2 (8-inch) unbaked pie crusts or 1 (9-inch) crust

Combine syrup, sugar, salt, butter and vanilla and mix well. Add eggs and mix. Pour into unbaked pie shells. Sprinkle pecans over the entire top.

Bake in preheated 350°F oven for 45 minutes. When cool, top with Cool Whip if desired or serve with ice cream. If using two pie crusts, add a few more pecans.
