SAUERKRAUT SALAD (GREAT ON
BRATS)
 
1 can (2 1/2 size) sauerkraut
3/4 c. celery
3/4 c. onion
3/4 c. green pepper
1 sm. jar pimento
1 1/2 c. white sugar
3/8 c. apple vinegar

Drain sauerkraut and save 4 tablespoon of juice. Boil together juice and 1 1/2 cups white sugar and 3/8 cup of apple vinegar for 3 minutes. Pour over fine chopped celery, onion and green pepper and pimento. Make a day ahead of time.
