SAUERKRAUT SALAD (DIET) 
2 c. well-drained sauerkraut
1/2 c. grated carrots
1 1/2 c. minced celery
1 1/2 c. seeded and chopped green pepper
1/2 c. seeded and chopped sweet red pepper
1/2 c. finely chopped onion
1/2 c. vinegar
1/2 c. sugar or substitute
1 tsp. salt
Dash of pepper

Place sauerkraut in colander and rinse with cold water. Allow to drain thoroughly. Combine with rest of ingredients and let stand overnight. Makes 12 (1/2 cup) servings.
