SPAGHETTI SAUCE | |
3 lg. cans tomatoes 1 can stewed tomatoes 1-2 sun dried tomatoes (optional) 3 tbsp. parsley flakes 2-3 cans tomato paste (2 if crushed tomatoes were used) 3 cloves garlic 1 tbsp. salt (less if sun dried tomatoes are used) 1-1 1/2 tsp. pepper 1 1/2 tsp. garlic powder 1 1/2 tsp. basil In large saucepan saute sliced garlic in oil (part olive is recommended). Add all other ingredients except tomato paste. Simmer for 1 hour, stirring occasionally. Add tomato paste and 2 cans of water for each can of paste, cook for another hour. Add cooked meats (meatballs, sausage, pork chops, etc. - pork products and some of their drippings give needed flavor to sauce). The longer this is cooked, the better it is. MEATBALLS: 1 1/2 lb. ground beef 2-3 slices wet, hard bread, with excess water squeezed out 1 tsp. salt 1 tbsp. parsley 2 eggs 3 tbsp. grated cheese 1/2 tsp. garlic powder 1/2 tsp. pepper 1/2 tsp. lemon juice Mix; shape and brown. Add to sauce last hour. Drippings add flavor to sauce. |
