NEW ORLEAN'S PECAN PIE 
1/4 tsp. lemon extract
2 eggs
1 c. white sugar
4 tbsp. flour
1 c. sour cream
1/4 tsp. salt
Baked 9 inch pie crust
1 c. brown sugar
1 c. broken pecans

Cook mixture of egg yolks, sugar, flour, sour cream, lemon extract and salt in top of double boiler, stirring constantly until thickened. Spoon into baked pie shell. Beat egg whites until stiff and gradually beat in brown sugar. Stir in pecans and spread over filling. Bake about 15 minutes in a 325 degree oven.
